Areo Mint Brownies

Gooey delicious brownies. Believe it or not I have never baked brownies and this was my first time, so I wanted to add a little twist.


An easy and simple recipe to follow!


Prep time: 30 minutes

Cooking time: 1 hr

Total time: 1hr 30m

Makes 12 brownies


Ingredients

  • 100g plain flour

  • 30g cocoa powder (I used Dr Oetker)

  • 200g unsalted butter

  • 200g dark cooking chocolate

  • 2 tsp peppermint extract

  • 3 eggs

  • 280g caster sugar

  • 150g mint Areo

  • 50g white chocolate

  1. Preheat the oven to 160C Fan

  2. Start melting the butter and dark chocolate together. You can do this slowly in the microwave or use the bain marie method. (This is where you boil a tiny bit of water in a pan and place a bowl on top. Making sure the bowl is not touching the water and then you can melt the chocolate slowly). If you are using the bain marie method, do it on a low heat making sure you do not burn the chocolate and butter.

  3. Once it is melted, set aside and allow to cool down to room temperature.

  4. In a large bowl, whisk together the eggs and sugar. To speed up the process use an electric whisk. The mixture should become fluffy and double in size

  5. Using a spatula fold in the melted chocolate and butter. Add in the peppermint extract as well.

  6. Sieve in the flour and cocoa powder. Give everything a good mix making sure there are no lumps.

  7. Now you can start adding in the mint Areo. Crumble half of the Areo and fold it into the mixture

  8. With the remaining Areo, break up it up so they are individual bubbles. Carefully fold it into the mixture.

  9. Prepare a tray with some parchment paper and start to spread the brownie mixture.

  10. Once the mixture is evenly spread in the tray, pop it into the oven and bake for 1 hour.

  11. To test the brownie mix use a toothpick, the mixture should come out a bit clear. They are gooey brownies so the toothpick won't come out completely clean.

  12. Melt the white chocolate and once the brownies have cooled down, drizzle on top.

  13. Enjoy!
