Lemon and White Chocolate Cookies

These cookies are so delicious and taste of a zesty lemon! The exact same recipe as my orange and mint chocolate cookies but just simply adapting the recipe.
Prep time: 15 minutes
Cooking time: 15 minutes
Total time: 30 minutes
Makes 17 cookies
Ingredients
225g grams Stork butter
1 cup granulated sugar
2 tbsp lemon zest
2 tbsp fresh lemon juice
2 1/2 cups of plain flour
1 tsp baking power
1/4 tsp salt
1 egg
200g white chocolate chips
Preheat oven to 180 degrees (fan) 350F
Start by putting the flour, baking powder and salt together and give it a good mix.
In a separate large bowl put together the sugar and orange zest. Now the trick here is to rub the zest and sugar together!
Once you have rubbed it altogether add in the butter and cream it together until it is fluffy.
Add in the egg and lemon juice, continue to mix everything together.
Gradually start adding in the flour and mix it in with a spatula . (It is going to look rather dry but give it a good mix and everything will combine together perfectly)
Chop the chocolate buttons into small pieces, add it into the bowl. Give it a good mix.
Prepare the baking trays with some parchment paper and use a tablespoon to scoop out the mixture, roll it into a ball with your hands and pop it onto the tray.
Cook for around 15 mins or until you see the edges start to turn golden.
