Butternut Squash and Sweet Potato Soup

Creamy flavourful soup with a little kick. Using a hand blender achieves the perfect creaminess!


Serves 2-3

Prep time: 10 minutes

Cooking time 25 minutes

Total time: 35 minutes


Ingredients

  • 1/2 butternut squash

  • 3 sweet potatoes

  • 1 onion

  • 1 tsp chilli fakes

  • 3 garlic cloves

  • 1L vegetable stock (2 oxo cubes)

  • Salt and pepper to your taste

  • Single cream to drizzle on top


  1. Cut your butternut squash in half and peel as well as the sweet potatoes then give them a wash.

  2. Heat up your pan and then add in your oil once its hot.

  3. Chop up your vegetables into small chunks and fry them off in your pan for 15 minutes.

  4. Add in your stock, bring to a boil and then blend your vegetables together with your hand blender.

  5. Add in your cream and chilli flakes, give it taste and then you will know how much seasoning you will need.

  6. Simmer for 10 minutes and then serve and drizzle cream on top.

  7. Enjoy!
