Salt and Pepper Chicken

A fakeaway which is simple and easy to make!
Prep time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
Serves 2
Ingredients
2 chicken breasts
3 spring onions
1 red pepper
1 medium onion
1 egg
1/2 cup plain flour
2 1/2 tsp mixed spice
2 1/2 tsp pepper
1 tsp salt
1 tsp chilli flakes
1 tbsp granulated sugar
1/2 cup oil
Heat up a wok and once it is hot add in the oil.
Dice the chicken and season with 1 1/2 mixed spice, pepper and 1 tsp salt.
Rub it into the chicken and make sure everything is evenly coated.
Whisk the egg in a small bowl and place 1/2 cup of flour onto a plate.
Dip the chicken into the egg and then into the flour, making sure it is evenly coated.
Cook until golden on both sides.
Once cooked removed from the wok and place onto a plate with kitchen roll so it can soak up the excess oil.
Add in the diced pepper and onion into the wok and fry for 2 minutes.
Add in half of the sliced spring onions, season with 1 tsp mixed spice, pepper and chilli flakes.
Give everything a good stir and then add the chicken back in, cook until piping hot.
Add in 1 tbsp of granulated sugar and serve with the rest of the spring onions.
