Chicken Milanese With Tomato Spaghetti

One of my favourite Italian dishes and I was so excited when I got to experiment and make this dish. Easy to follow and the flavours are great!
Serves 2
Prep time 20 minutes
Cooking time: 15 minutes
Total time: 35 minutes
Ingredients
2 Chicken breasts
150g Spaghetti
1 tsp garlic paste
2 tbsp tomato passata
1 tsp pepper
3 tbsp oil
For the breaded chicken
1/2 cup flour
1/2 bread crumbs
1 large egg
1 tsp salt and pepper
1 1/2 tsp mixed herbs
1 tsp smoked paprika
Start by taking the chicken and cut down the middle of the breast to form a butterfly shape. Cover with cling film and use a rolling pin to beat the chicken flat, make sure it’s even.
Start to heat your pan up. When it is hot, add your oil.
Prepare the bowl of flour
Mix all the seasoning in with your breadcrumbs.
Whisk the egg in a bowl so it is ready.
Dip the chicken in the flour and pat off the excess, dip into the egg mixture and then dip into the breadcrumbs and make sure the chicken is evenly coated.
Once this is done put the chicken in the pan and cook until both sides are golden.
Boil water in a pan and add in the spaghetti, cook until al dente.
Drain, add the garlic paste, tomato passata and pepper. Gently cook on a very low heat just to thicken up the tomato sauce.
Serve and enjoy!!!
