Creamy Tomato Gnocchi with Red Repper and Chorizo Sausages

A comforting dinner with a creamy tomato sauce accompanied with Linda Mccartney sausages! A yummy and filling dish.


Serves 3

Prep time: 5 minutes

Cooking time: 35 minutes

Total time: 40 minutes

Ingredients

  • 3 Linda Mccartney red pepper and chorizo sausages

  • 1 packet ready made gnocchi

  • 50g spinach

  • 1 red pepper

  • 1onion

  • 1 can chopped tomatoes

  • 75ml double cream

  • 1 tsp salt and pepper

  1. Preheat your oven to 200 degrees (fan) and pop your sausages in for 30 minutes.

  2. After 15 minutes has passed start chopping up your pepper and onion.

  3. Saute until fragrant. Then add in your chopped tomatoes and double cream.

  4. Season with salt and pepper and add in your gocchi.

  5. Simmer until the sauce thickens. Stir occasionally.

  6. By now the sausages should be ready. Remove them from the oven and cut them up into small pieces and add them into the pan to cook with the sauce.

  7. Once you can see the sauce has thickened add in your spinach and cook until the spinach has shrunk.

  8. Do one last taste test and season to your liking.

  9. Serve and enjoy!
