Fresh Homemade Tagliatelle

I was lucky enough to be gifted a pasta machine from Pro Cook for my birthday! It is so easy to use and I cannot wait to experiment with it!
Serves 2
Prep time: 40 minutes
Cooking time: 5 minutes
Total time: 45 minutes
Ingredients
200g of “00” flour
2 medium eggs
Whisk together the eggs
Make a well in the flour and slowly add the eggs and using a fork draw in the flour from the edges.
Once you’ve poured in all of the eggs and combined the flour. Knead into a ball and then wrap in cling film and put in the fridge for 30 mins.
Cut the dough into 2 pieces and flatten so it can fit through the pasta machine. Around 5mm will do. Dust the dough slightly. (Cover the dough that is resting with a damp tea towel so it doesn’t dry out!)
Start with the first setting and roll it through until you have a rectangle.
Then start going up in the settings. I only went to 7 as it was the perfect consistency and I could see my hand through the dough. Throughout the process dust the dough slightly so it doesn’t all stick together. Don’t over do it as it’ll make your pasta all sticky and unpleasant once it’s cooked.
Finally roll the dough through the tagliatelle section and you’re done!!
To cook the pasta it literally only takes a few minutes! Season your water with salt, allow to boil and then cook for 4 minutes and enjoy!
