Veggie Toad In The Hole

This comforting dish is amazing to have on a cold winters evening. With a little twist by adding carrots into the dish making sure you get your veggies!
Serves 4
Prep time: 10 minutes
Cooking time: 45 minutes
Total time: 55 minutes
Ingredients
150g plain flour
3 eggs
200ml milk
1 tsp baking powder
1 pack of vegetarian sausages
3 medium carrots
1 tsp mixed herbs
3 tbsp oil
Preheat your oven, follow the instructions on how to cook your veggie sausages in 1 tbsp oil
Allow them to golden up.
Boil some water and once boiled, add in your peeled carrots that are cut into strips. Par boil these (speeds up the cooking process once they are in the oven)
In the meantime, prepare the yorkshire pudding mixture by adding your flour, eggs and baking powder into a bowl. Mix until it is smooth.
Gradually add in the milk making sure you get rid of any lumps. Once it looks smooth, add in 1 tsp mixed herbs, salt and pepper
Once your sausages look golden/partly cooked remove them from the oven and add in 2 tbsp oil.
Drain your carrots, add them into the dish with your sausages.
Pour the yorkshire pudding mixture over the top.
Pop back into the oven for around 45 minutes or cook until crispy and golden!
Serve and enjoy!
