Chicken Tikka Masala Curry

A delicious dish to make at home for the perfect curry night with your family. With this recipe you can adjust the spiciness so if you brave and can handle the heat add in as much as you like!
Serves 2
Prep time: 30 minutes
Cooking time: 45 minutes
Total time: 1hr 15m
Ingredients
2 chicken breasts
1 large onion
2 vegetable oxo cubes, 400ml water
1 red pepper
For the marinade
2 tbsp tikka masala paste
2 tbsp gram masala
1/2 tbsp turmeric
1 tbsp tomato puree
2 garlic cloves minced
150 ml greek yogurt
1 tsp chilli powder
Start with dicing the chicken and place it into a bowl.
Now for the marinade, place all of the ingredients onto the chicken that is in the bowl.
Give everything a good mix, cover with cling film and place it in the fridge for 30 minutes.
Chop the onion and red pepper into small pieces.
In a hot pan with oil, fry the onion for a few minutes until fragrant and then add in the red pepper and fry until it is soft.
Add in the chicken and fry until golden.
Slowly add in your stock whilst stirring. Bring to a boil and then simmer for 45 minutes.
Once the sauce has thickened serve with rice and naan bread! Enjoy
