Lentil Bolognese with Courgette Spaghetti

I was extremely sceptical at first when I wanted to try this dish out however it turned out really good. It fills you up for hours and it is low in carbohydrates and high in protein due to the red lentil.
Serves 2
Prep time: 10 minutes
Cooking time: 30 minutes
Total timeL 40 minutes
Ingredients
2 courgettes
1/2 cup red lentils
100g mushrooms
1 large carrot
1 onion
1 can of chopped tomatoes
1 vegetable oxo cube, 200ml
1 tsp basil
1 tsp salt and pepper
Heat a pan and once it is hot, add in your oil.
Finely chop the carrot, mushrooms and onion. Saute until fragrant.
Give the red lentils a good rinse and add them into the pan.
Add in the chopped tomatoes, along with the stock.
Give everything a good stir and season with salt, pepper and basil.
Simmer for 30 minutes until the red lentils are cooked and the sauce has thickened.
For the courgette spaghetti, simply get a peeler and peel the courgette. Saute in some butter for a few minutes and season.
