Mediterranean Vegetable Tagliatelle

An easy, quick and colourful dinner to rustle up when you're in a rush and fancy something healthy!


Serves 2

Prep time: 10 minutes

Cooking time 15 minutes

Total time: 25 minutes

Ingredients

  • 3 Spirals of tagliatelle

  • 1 Courgette

  • 1 Red pepper

  • 1 Yellow pepper

  • 1 Red onion

  • 1 Garlic clove

  • 1 Can of chopped tomatoes

  • 1 tsp paprika, oregano, salt and pepper

  • 1 tbsp oil

  • 1 tbsp Tomato puree

  1. Dice the red and yellow pepper up as well as the courgette.

  2. Slice your red onion up.

  3. Mince your garlic clove.

  4. Boil a pan of water for the tagliatelle and cook until al dente.

  5. Heat up a pan and once it is hot add in your oil.

  6. Put the peppers, onion, garlic and courgette into the pan and cook until fragrant.

  7. Add in your chopped tomatoes, tomato puree and season with paprika, oregano, salt and pepper.

  8. Simmer until the tomatoes thicken, add in your tagliatelle. Give everything a good mix

  9. Serve and enjoy
