Raspberry and White Chocolate Cookies

These cookies are exactly like my orange cookies however we have just replaced the orange with raspberry and white chocolate. Go ahead and experiment with other flavours! This recipe is so easy to adapt and if you like soft cookies, stick with this recipe!

Prep time: 15 minutes

Cooking time: 15 minutes

Total time: 30 minutes

Makes 15 cookies

Ingredients

  • 225g grams Stork butter

  • 1 cup granulated sugar

  • 2 1/2 cups of plain flour

  • 1 tsp baking power

  • 1/4 tsp salt

  • 1 egg

  • 100g white chocolate

  • 200g raspberries

  1. Preheat oven to 180 degrees (fan) 350F

  2. Start by putting the flour, baking powder and salt together and give it a good mix.

  3. In a large bowl mix the butter and sugar together until it is creamy.

  4. Add in the egg, continue to mix everything together.

  5. Gradually start adding in the flour and mix it in with a spatula.

  6. Chop the white chocolate into small pieces, add it into the bowl. Give it a good mix.

  7. Gently fold the raspberries.

  8. Prepare the baking trays with some parchment paper and use a tablespoon to scoop out the mixture, roll it into a ball with your hands and pop it onto the tray.

  9. Cook for around 15 mins or until you see the edges start to turn golden.

  10. Enjoy!
