Spicy Fajita Pasta Bake

If you are fan of spicy food then this pasta bake is the dish for you! A simple recipe with amazing flavour.


Serves 4-6

Prep time: 5 minutes

Cooking time: 50 minutes

Total time: 1hr 10min

For the bake:

  • 1 red pepper

  • 1 green pepper

  • 1 medium yellow or red onion

  • 150g mushrooms

  • 300g penne pasta (or any pasta you like)

  • 250g mixed spicy cheese (I used Morrison’s blended mix: chilli mozzarella, cheddar and gouda)

  • 100g cream cheese (optional)

For the fajita mix:

  • 1 tbsp oregano

  • 1 tbsp chilli powder

  • 1 tbsp paprika

  • 1 tbsp cumin

  • 1 tbsp garlic powder

  • 1 tsp salt and pepper

  1. Preheat oven to 200C (fan)

  2. Bake the sliced peppers, mushrooms and onion for 30 mins with half the fajita mix.

  3. Meanwhile boil pasta until it is al dente

  4. Once the pasta is cooked add it into the tray with the veggies and the rest of fajita mix (if you’re using cream cheese you can mix it in now).

  5. Spread the cheese on top and cook until it has melted and turns golden

  6. Enjoy!
