Tofu Marinated In Chilli Soy Sauce

This vegan recipe is super easy to follow and gives your tofu amazing flavour. I'm not a massive fan of tofu so whenever I decide to cook with it I always marinate it and cook it in a sauce to amp up the flavour.
Serves 2
Prep time: 30 minutes
Cooking time:15 minutes
Total: 45 minutes
Ingredients
280g tofu
1 cup rice, 2 1/2 cups of water
1 tsp sesame seeds
Cucumber, tomato , carrot or mixed salad leaves to garnish
For the marinade
3 tbsp soy sauce
1 tbsp honey
1 tsp chilli flakes
1 tsp ginger
1 garlic clove, crushed
2 tbsp ketchup
Start combining all of your ingredients for the marinade together and set aside once you have done this.
Cut up your tofu into small pieces and place into a bowl.
Pour your marinade over the tofu and cover with cling film
Set aside for at least 30 minutes.
Meanwhile start to prepare your rice.1 cup of rice, 2 1/2 cups of water and bring to a boil. Once boiled reduce to a simmer and stir the rice occasionally so it doesn't stick to the bottom of the pan.
Once 30 minutes has gone by heat up a pan and add in your oil once it is hot. Pour the tofu in along with the marinate and cook until the tofu has browned up and the sauce has thickened.
Serve along side your rice, salad and sprinkle some sesame seeds over your tofu.
