Vegan Noodle Soup

Serves 3
Perfect to have on a cold rainy day!
Prep time: 10 minutes
Cooking time:25 minutes
Total time: 35 minutes
Ingredients:
2 Carrots
3 medium potatoes
1 onion
1 garlic clove
200g vegan pasta
1L Vegetable stock (2 oxo cubes)
Fresh coriander to garnish
Salt and pepper to your taste
Peel your carrots and potatoes and then give them a wash.
Start to chop up your onion, garlic, carrots and potatoes into small cubes.
Heat up your pan and add in your oil.
Throw in your vegetables in and fry for 2 minutes.
Prepare your 1L stock with two oxo cubes and pour it into your pan.
Give the soup a good stir and taste it. Once you have tasted it you will know how much seasoning you will need to add.
Add your vegan pasta.
Simmer your soup for around 20 minutes until all of your vegetables and pasta are soft.
Serve, sprinkle your coriander on top and enjoy!
