Vegetable Egg Fried Rice

An easy and light meal to have as a snack or even for dinner if you are not really in the mood to cook. The best thing about this recipe is that you will most likely already have these ingredients.


Serves 2

Prep time: 5 minutes

Cooking time: 15 minutes

Total time: 20 minutes

Ingredients

  • 1 cup rice, 2 1/2 cups water

  • 3 tbsp soy sauce

  • 1 cup frozen vegetables

  • 2 eggs

  • Salt and pepper to your liking

  • 2 tbsp oil

  1. Prepare your rice first to the measurements I have mentioned and stir it occasionally so it does not stick to the pan.

  2. Once the rice is cooked, set it aside and allow it cool down for at least 30 minutes.

  3. Heat up a wok and once it is hot, add in your oil.

  4. In a small jug, crack your eggs and whisk them together.

  5. Add them into the pan and scramble for around 4 minutes.

  6. Remove the eggs and set aside. Add the remanding oil and your frozen vegetables.

  7. Once the vegetable have soften, add in your rice, eggs and mix everything together.

  8. Finally add in the soy sauce, mix it altogether and season to your liking.

  9. Enjoy
