Vegetarian Spaghetti Bolognese

A simple flavourful recipe to follow if you're not really in the mood to cook for the night!


Serves 2

Prep time: 10 minutes

Cooking time: 30 minutes

Total time: 40 minutes

Ingredients

  • 1 tbsp oil

  • 250g Quorn mince

  • 180g Spaghetti

  • 2 Carrots

  • 1 Onion

  • 1 garlic clove

  • 1 can chopped tomatoes

  • 200ml Vegetable stock

  • 1 tbsp Tomato puree

  • 1 tsp salt and pepper

  • 1 1/2 tsp basil

  1. Start by peeling your carrots and chopping it up. Do the same with the onion and garlic.

  2. Heat your pan up and once it is hot add your oil.

  3. Saute the carrots, onion and garlic until fragrant.

  4. While you are sauting the vegetables, prepare a pan of boiling water for your spaghetti.

  5. Once the vegetables have become fragrant. Add in your chopped tomatoes, vegetable stock, tomato puree and quorn mince.

  6. Stir everything together and season with salt, pepper and basil

  7. Simmer until the bolognese thickens. Whilst you are waiting for this, put your spaghetti into the boiling water and cook until al dente.

  8. Drain the spaghetti once al dente.

  9. Once the bolognese has thickened, serve and enjoy!
