Olivier Salad (Russian Potato Salad)

This salad is perfect to have for lunch as it will keep you full for ages! Super easy to make and without doubt you will mostly likely already have the ingredients.


Prep time: 10 minutes

Cooking time: 20 minutes

Total time: 30


Ingredients

  • 4 potatoes

  • 2 large carrots

  • 4 medium eggs

  • 6 medium gherkins

  • Canned peas

  • 3 tbsp mayonnaise




  1. Peel your carrots and cut them in half. Then boil them with the potatoes, no need to worry about peeling the potatoes as you will do this once they are boiled.

  2. Whilst they are boiling also boil your eggs for 10 minutes so the yolk is solid inside.

  3. While everything is boiling this is when you can prepare the gerhkins. Slice the gherkins in half and then slice them again so you will be left with four stripes. Then chop them up so they are around 1cm thick. Transfer to a large bowl.

  4. Drain your peas then add them to the bowl as well.

  5. Check if your carrots and potatoes are ready. You can do this by poking a knife in them and seeing if they easily fall off. Once they are ready, drain them and soak them in cold water. This will help cool them down. Start peeling the potatoes skin off, this will come off easily as the potato has been boiled to the point where it's extremely soft. Cut the potatoes into small pieces along with the carrots and transfer to the bowl.

  6. Now you can drain your eggs, peel and cut them. Transfer them to the bowl as well.

  7. Everything is now in the bowl and the final step is to mix in the mayonnaise! I use 3 tbsp however you can add extra depending on how much mayonnaise you like.

  8. Now enjoy with friends and family!
