Fluffy Rockcakes

These rock cakes are so soft and fluffy on the inside and have the perfect crunch when you bite into them! My boyfriends family love it when I cook these as they are delicious to have with a cup of tea.
Makes 10 rock cakes
Prep time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
Ingredients
225g self raising flour
125g stork butter
75g caster sugar
1 tsp baking powder
150g dried fruit (sultanas)
1 egg
2 tbsp milk
2 tsp vanilla extract
Preheat the oven to 180C Fan
Combine the flour, sugar and baking powder in a large bowl.
Cut the butter into cubes and rub it into the flour so it resembles breadcrumbs.
Add in the dried fruit.
In a separate bowl combine the egg, milk and vanilla extract.
Pour the egg mixture into the flour and mix everything together with a spatula so it becomes a thick sticky dough.
Now use a tablespoon to spoon out the mixture and place onto a tray with parchment paper. It does not need to be a smooth round ball, it is better if they are messy! This is how you get a lovely crispy exterior.
Bake for 20 minutes or until the rock cakes become golden.
Once out of the oven, allow to cool for a few minutes and then transfer to cooling rack.
