Scrambled Egg, Mushroom and Spinach Toast

An extremely easy, healthy breakfast which is perfect to have after a workout. High in protein and low in carbohydrates.


Serves 1

Prep time: 5 minutes

Cooking time: 10 minutes

Total time: 15 minutes

Ingredients

  • 2 eggs

  • 1 tbsp milk

  • 1 tbsp butter

  • 1 slice

  • 100g mushroom

  • 2 handfuls of spinach

  • 1 tsp salt and pepper

  1. Prepare two pans and heat them up. Once they are hot, add the butter and swirl it around.

  2. Chop the mushrooms in half and add them into the pan. Season with salt and pepper.

  3. Put your toast in the toaster, so it will be ready once you have finished preparing your scrambled eggs and mushrooms.

  4. When the mushrooms have browned up a bit add in your spinach and cook until it has shrunk in size

  5. Crack the eggs into a jug, add your milk and mix it together.

  6. When the butter starts to bubble add in the eggs.

  7. Constantly keep stirring your eggs until you are happy with the consistency.

  8. Finally butter your toast. Add the scrambled eggs, season. Add your mushrooms, spinach and enjoy!
