Vegetable Puff Pastry Pies

These tasty pies are great to have as a snack and share around with your family. To speed up the process you can buy pre made puff pastry.


Serves 4

Prep time: 10 minutes

Cooking time: 40 minutes

Total time: 50 minutes

Ingredients

  • 1 Pack of pre-made puff pastry (I used Jus Rol)

  • 1 tbsp butter

  • 2 small carrots

  • 1 onion

  • 2 potatoes

  • 1 small can of peas

  • 1 vegetable oxo cube,100 ml

  • 1 tbsp plain flour

  • 1 tsp pepper

  • 1 tbsp milk

  1. Preheat the oven to 180 degrees (fan) or 375F.

  2. Remove the puff pastry from the fridge and allow it to come to room temperature.

  3. In the meantime start preparing your filling. Peel and dice the potatoes, carrots and onion. Drain the can of peas.

  4. Heat up your pan and once it is hot, add in the butter. Once it starts to bubble add the vegetables to the pan. Saute for a few minutes.

  5. Add the plain flour and give everything a good mix.

  6. Slowly add in the stock whilst still mixing everything together.

  7. Once the stock has thickened. Turn off the heat and allow the filling to cool down

  8. Take out the puff pastry and cut it into rectangles. You will need two rectangles. Use a tablespoon for the filling and put it onto your first rectangle. With the second rectangle place it on top and use a fork to seal the pie.

  9. Repeat the process until all of the filling is used up.

  10. Brush the pies with milk and then place on a tray with parchment paper and cook until golden.
